Chilhuacle Rojo Pepper Seeds
A Vibrant Red Chilhuacle Hybrid With Thick, Juicy, Heart-Shaped Fruits
Chilhuacle Rojo is a beautiful Capsicum annuum hybrid discovered by our friend Michael Zillgitt, head chef at Milwaukee Steak House, among a sowing of classic Chilhuacle Negro peppers.
Michael grew the original F1 plant, noticed immediately that something was different, and gave the new hybrid the working name Chilhuacle Rojo. While the Chilhuacle Negro mother is known, the pollen donor remains a mystery. It’s possible the original Chilhuacle Negro seed came to Michael through Sebastian Dellaire in Quebec, but the exact origin of the cross is unknown.
The name Chilhuacle Rojo stuck—even though, genetically speaking, this is no longer simply a red Chilhuacle Negro.
What emerged from the cross were gorgeous vibrant red, heart-shaped fruits with substantially thicker, juicier flesh than traditional Chilhuacle Negro. The pods still wrinkle as they mature in a way reminiscent of their Chilhuacle mother, but their much heavier flesh means they don’t dry nearly as readily. Instead, these peppers really shine fresh: sliced into salads, roasted, cooked into sauces, or stuffed whole.
Selecting the Chilhuacle Rojo Line
After growing the F1, Michael sent me F2 seed so I could continue working the line. As expected from an F2 hybrid population, those plants began showing some interesting segregation, and two sibling expressions stood out as distinctly different from one another.
One expression produced lighter green immature fruits with noticeably thicker walls, while another produced darker green immature fruits that seemed to retain more of the classic Chilhuacle Negro mother traits.
Rather than combine everything back together, I decided to begin selecting these as two separate sibling lines.
The seed offered in this listing comes from the line I’m selecting toward thicker flesh and lighter green immature fruit, while maintaining the brilliant red mature color and distinctive heart-shaped form that made the original hybrid so interesting.
These plants were isolated for seed production, making the Fall 2026 seed offered here the F3 generation.
Because Chilhuacle Rojo is still an early-generation selection, growers should expect that some variation can still occur. That’s part of what makes working with a developing line like this interesting. We’re not pretending this is a completely stabilized heirloom—we’re documenting and selecting it as it develops.
Grow Chilhuacle Rojo Like a Pepper Guru
Chilhuacle Rojo produces large, vigorous, highly prolific plants capable of carrying impressive numbers of its distinctive heart-shaped fruits.
One of the characteristics that immediately separated it from Chilhuacle Negro in our gardens was its earlier production. Classic Chilhuacle Negro can take its time, particularly through the hottest part of summer. Chilhuacle Rojo has proven considerably quicker to get into meaningful production, especially once temperatures begin falling back below roughly 95°F.
Fruits begin a relatively light green in the line currently being selected, eventually ripening to a brilliant, glossy red. As they reach full maturity, the pods can develop attractive wrinkles reminiscent of Chilhuacle Negro while retaining their substantially thicker, juicier flesh.
Scoville Heat Level
Chilhuacle Rojo has been essentially sweet in our taste tests, with a little noticeable heat through most of the flesh. The heat can ramp up when eating down into the placenta, but even there it is less spicy than Chilhuacle Negro.
This is nothing approaching the heat of an old school Hot Banana or Jalapeño and should be considered a sweet to mild pepper based on our experience with the line so far. Everyone’s tolerance is different, so proceed with caution until you’ve grown familiar with this one.
Because Chilhuacle Rojo is still an early-generation selection, some variation between plants and future generations is possible.
